Rebrands the org community-health files Introibo -> Directorium (profile README, CONTRIBUTING, CoC, SECURITY, issue templates). Security contact -> security@directorium.org; website -> directorium.app.

Preserved (flip with the org rename per the runbook): github.com/Introibo-App repo links and @Introibo-App refs.
